We whizzed up this vegan avocado chocolate mousse recipe at our Vegan Cookery Class. The creamy texture of the avocado mixed with some cocoa and topped up with some crunchy pistachios makes it the perfect treat for all! Why not try this simple three step recipe today!
1 large ripe avocado
60g cocoa powder
60g coconut milk or almond milk
2 tsp agave or soft brown sugar
1 tsp vanilla extract
50g chopped toasted pistachios to garnish
Purée the avocado until smooth.
Mix together the cocoa powder and milk until mixed and add to the avocado.
Stir in the agave/soft brown sugar, vanilla extract and put into your pots and chill. Serve topped with the toasted pistachios.
