Gazpacho Recipe

Serves 4-6

Ingredients

2 kilo tomatoes
1 green pepper, deseeded
1/2 onion
1 clove of garlic
1 granny smith apple or 1 avocado
100ml olive oil
30 ml white wine vinegar
1 tsp salt

To serve – bacon, serano ham or parmesan croutons

Method

Liquidise, check seasoning and chill.

To serve sprinkle with serano ham/crispy bacon or parmesan croutons.
