Hello foodies and welcome back to The Avenue’s Weekly Shenanigans! We cannot believe it’s September already and back to school for the kids, this doesn’t mean we are slowing down at the Cookery School though!
On Saturday, we welcomed Ski Beat, a ski chalet company, who were busy preparing their chalet hosts for the upcoming season. We are buzzing about all the weekly classes that started up again on Monday: The Really Useful, Off to Uni, Duke of Edinburgh Residential, Basic to Brilliant and Chalet Host Courses. Throughout the week, the students cooked up a storm, from risotto, to chicken pie, roast, chocolate roulade and apple crumble….Mmmm all the comfort foods just in time for autumn.
We had Alex and Dan from Le Ski visit us on Tuesday where they shared stories about what it is like working in Courchevel and Val D’isere and chatted about all the benefits of doing a ski season. We also had Naomi from Ski Armidillo in on Thursday, who operates in Verbier and Val D’Isere. For those of you who are still pondering the idea of a ski season or even looking to work on a yacht, lodge or private house and want to learn how to be the perfect host, we still have space available on our October courses. Book now, so you are one step closer to the job of a lifetime.
On Tuesday night, we turned the The Avenue into a French patissier with our Macaron Masterclass. An array of delicious flavours were made and everyone went home, not only with boxes of beautiful French treats but with the confidence to recreate Macarons on their own.
Diana taught Zoe on Thursday. Zoe is working hard in the kitchen and outside as she is training for the New York Marathon in November. We cannot wait, as The Avenue have been asked to join her out in America and work with her to ensure she is eating food that will keep her energised and to offer some moral support.
Thursday was another big Avenue Dinner Party, where we had a full kitchen of over 50 friends and family members, who the students had to cook for! Everyone indulged in mouthwatering Coronation Chicken Wraps alongside a Rice Salad followed by delectable Profiteroles and Meringues for pudding.
No rest for the wicked but plenty of Friday fun! – tonight we have our Vegan Cooking Class where the students will make a tasty three course dinner with a healthy side of bottomless wine. Starting with Guacamole and Tzatziki with Melba Toast, Sautéed Butternut Paella for the main and finishing the meal off with an oh-so-delicious Chocolate Tart with Berries.
Saturday brings the end of this week’s work at The Avenue and we are finishing with an afternoon of inevitable giggles and excitement from 22 hens. The ladies will be welcomed with a glass of bubbly and bottomless wine while they create a light lunch of Asparagus Rolls, Pan-Fried Sea Bass on a Bed of Ratatouille and last but by no means least; Lemon Possets and Rosemary Biscuits for pudding.
Finishing off with our Gluten Free Cookery Class where attendees will learn how to make 3 courses of free-from recipes including Flat Bread, Gnocchi and Madeleine Tiramisu. A Gluten-Free paradise! And parents listen up; we are starting our Mondays Kids After School Classes and our Kids Weekend Classes next Sunday. Learning to make food you would want them to eat on a daily basis – no more pizza classes and cupcake decorating! Can be bought individually or in a package of 6 or 12. Maybe if you’re lucky, they’ll even start asking to help make dinner at home!
Next week is week two of our Basic to Brilliant and Chalet Hosting Course. We can’t wait to see some of the delicious cakes and canapés the students will put together during the week, as well as learning a three course meal every day. The best bit is we get to eat it all in the office too!
