This is a must-have for any bakers out there.  You can keep it simple with sprinkles or make it a bit funky and add some extra goodies inside or out…why not try adding Horlicks to the cake mix and icing it with chocolate to make it a Malteaser cupcake!

Cupcakes
(makes 6 cupcakes)

Ingredients:
2 eggs and the equivalent in weight of: self-raising flour
butter
sugar
2 tsp vanilla
Icing:
125g butter
300g icing sugar
1 tbsp milk

Method:

Preheat the oven to 170C.

Put 6 cupcake paper or silicone moulds in a Yorkshire pudding tin.

Beat the butter and sugar until light and fluffy and then gradually beat in the eggs with the vanilla. Fold in the flour and spoon the mixture into the cupcake cases until two-thirds full.

Bake for 20-25 minutes or until the sponge springs back. Leave to cool.

For the icing; beat the butter, icing sugar and milk until smooth.

Once the cakes are cold spread the icing over the top and decorate as you wish!
