It’s #BritishTomatoWeek and in the spirit of the week we are highlighting this juicy vegetable (that is technically a fruit) with our Basic Tomato Sauce recipe:
Ingredients:
1 onion, finely chopped
1 tbsp olive oil
1 clove of garlic
1 tsp tomato purée
1 tin chopped tomatoes
salt & pepper
sugar
Method:
Sweat the onion in the oil until soft. Add the garlic and cook for a minute. Add the tomatoes, tomato purée and simmer until reduced and thick. Season well with salt, pepper and a little sugar.
If you want too produce a smooth tomato sauce, put into a Magimix or use a hand held liquidiser.
N.B. Perfect over a bowl of pasta or rice and sprinkled with fresh basil.
