It’s Richards birthday and if you didn’t know already he has the biggest sweet tooth EVER – so much so he had to give up sweets for life! He hasn’t given up chocolate though and his favourite is a Chocolate Fudge Cake, so as a Birthday treat from Richard to you all he has given us this delicious recipe to share…

Chocolate Fudge Cake

Ingredients:
2tbs cocoa
150g sugar
2tbs golden syrup
2 eggs
150ml oil
150ml milk
200g flour
1tsp bicarb powder
1tsp baking powder
Icing:
50g butter
4tbs cocoa
3tbs milk
150g icing sugar
Optional toppings:
chocolate fingers
malteasers

Method:

Pre-heat oven to 175C.

Cream the cocoa, sugar, golden syrup & eggs.

Combine the oil and milk in a jug and gradually pour into the mix while beating.

Finally add the mixed flour, bicarb and baking powder and pour into 2 cake tins.

Bake for 30-35 minutes.

Meanwhile make the icing. Heat the butter with the cocoa. Cook for a couple of minutes then add the milk and icing sugar – stir until glossy then leave to cool.

Once the cake is cooked remove from the oven and leave in the tin to cool.

When it is cool slice in two and ice in the middle and on top. Finally, if you want to be really cheeky, frame with chocolate fingers and top with some malteasers!
