I can’t believe it’s December already. The year has well and truly flown by. Anyone else feeling the winter cold right now? Brrr…
Crimbo is really catching up with us and everyone seems to be prepping their festive menus already. We at The Avenue are feeling ultra festive in the kitchen and have an absolutely dreamy Christmas Recipe for you guys.
We all know the oh so simple meringue can be made into an array of glorious summer dishes – Eton Mess and Pavlova to name a couple but at this time of year you want those Christmas flavours to tantalise your festive spirit so we hereby present to you oooouuur….
Christmas Meringues!!!
Without further ado let’s kick off our Christmas inspired mid-week recipe!
Ingredients:
3 egg whites
Twice the egg whites weight in sugar
Filling:
200g mincemeat
200ml double cream
2 tbsp icing sugar
1 tsp vanilla bean paste
Method:
Preheat the oven to 100C.
Place the egg whites in a clean bowl, whisk until stiff. Slowly beat in the sugar.
Using a piping bag, or a metal spoon, place the meringue mixture to the size required on baking parchment on a baking tray. Place in the oven for 3 hours.
For the filling whisk the double cream, icing sugar and vanilla to soft peaks and roughly mix through the mincemeat.
Once the meringues are cooked (the base will sound hollow when tapped). Leave to cool on a rack and when cooled sandwich 2 together with a good dollop of the cream mix in the center.
