Happy Pancake Day everyone!!
This year we have decided to go rogue and branch out from the traditional pancake. Aebleskiver are a delectably delicious Danish Pancake. We hope you enjoy this recipe, because your Pancake Day is about to go from a 4 to a serious 14 out of 10!
Ingredients
125g flour
½ teaspoon nutmeg, or cinnamon
½ tsp orange zest
1 tsp baking powder
3 tbs sugar
2 eggs
175ml milk
1 cap vanilla extract
15g butter, melted
Nutella
Method
In a bowl, combine all the dry ingredients.
In another bowl, whisk the egg and then gradually add the milk and vanilla until fully combined.
Make a well in the centre of the dry ingredients and pour a bit of the egg mix into the middle. Slowly incorporate the dry ingredients into the wet, gradually adding more wet, until all fully incorporated.
Finally mix in the melted butter.
Heat aebleskiver or a patty tin on medium heat and generously brush the holes with oil.
Make sure the pan is hot enough before adding the batter.
When hot enough fill each hole about half full with batter and then quickly add Nutella until the holes are about ¾ full.
Finally add more pancake mixture on top of the Nutella to cover each hole.
Cook for about 1 or 2 minutes before flipping, you should see the batter bubble on the top. To flip; push a chopstick or fork on the side of the pancake and, gently but quickly flip the ball over. Continue cooking on the other side until golden brown.
Repeat this process until all the batter is finished.
Let them cool slightly and then dust with icing sugar before serving!
