Meet Eddie – June 2025’s Amigo of The Month! The only person we know who celebrates Chinese Burns Night with Haggis Spring Rolls…
How did you hear about The Avenue?
A friend lived just across the road and mentioned it. When I was hunting for a birthday gift for my niece, it just made sense to give it a whirl.
Uncle of the year award goes to…. Eddie!
How long have you been joining classes?
Oh, for years now! It all kicked off with a baking class with my niece, and before I knew it, I was hooked. Since then, it’s mostly been classes with friends or my brother. Once you start, there’s no stopping – especially with the 75+ classes we offer
Which classes have you done?
Way too many to count, honestly. Indian Class, Thai Class (helping a recently retired mate who was on cooking probation from his wife), Vietnamese Class, Bao Class, Korean Class, Knife Skills Class, and, of course, baking classes which started this whole thing off.
Cooking probation — that’s a thing? Glad that we could be of assistance.
What was your favourite class at The Avenue?
Honestly, the classes are fab, but it’s really about hanging out with people, learning cool stuff, and then demolishing some delicious food together. The Thai Class with the Pad Thai menu recently was a hoot, a group of four of us giggling through the whole afternoon. Sounds like our kind of therapy.
What’s your favourite dish to cook that you learnt with us?
Steamed Bao Buns, I’ve made those a bunch of times and they’re always a hit. But Diana’s Bread? That thing disappears faster than you can say “yum.” I’m suddenly craving Diana’s Bread. Thanks for that.
What was your favourite dish to eat at The Avenue?
Korean fried chicken, no contest. Crunchy, spicy heaven.
What’s the most obscure thing you’ve made in the kitchen?
A couple of years ago, inspired by a BBC piece, I made Haggis Spring Rolls to celebrate “Chinese Burns” basically the mashup of Chinese New Year and Burns Night. Wild, right? That’s next-level fusion.
What class would you like to do next?
The Fish Class is next on the list with my brother. Fingers crossed we don’t end up fishing for our dinner! Haha, I can assure you it’s less fishing, more feasting.
Any final thoughts?
I’m a huge fan. The school nails the balance between fancy-pants chef stuff and making it easy and fun. Plus, the science behind it all? Love it. Makes me feel like a kitchen wizard.
Eddie, you’ve officially raised the bar for fun in the kitchen, thanks for being such a brilliant part of The Avenue family.
