In celebration of #NationalCurryWeek we are hotting it up with our Katsu Curry recipe! This dish is perfect with our breaded chicken recipe which you can find here or for a vegetarian option try crispy aubergine 🍆.

Katsu Curry
(Serves 4)

Ingredients:
2 onions, sliced
4 garlic cloves, chopped
1 carrot, sliced
2 tbsp plain flour
3 tbsp mild curry powder
600ml veg stock
2 tbsp soy sauce
1 tbsp agave
2 bay leaves
1 tbsp garam masala

Method:

Sweat the onion until soft. Then add the garlic and carrots and cook until slightly softened. This should take about 10 to 12 minutes.

Add the flour and curry powder; cook for 1 minute.

Gradually stir in the stock until fully combined.

Add soy sauce, agave and the bay leaves. Slowly bring to the boil.

Turn down the heat and simmer for 20 minutes or so until the sauce thickens to a pouring consistency.

Stir in the garam masala.

Blend in a Magimix and serve.
