You have been slaving away in the kitchen and you have mounds of leftover turkey. You don’t want to waste it but you have had one too many cold turkey sandwiches in your time, well why not try out this super easy Leftover Christmas Turkey Green Curry to add some heat into  your cold winter ❄️

1tbs vegetable oil
leftover turkey meat, flaked
2.5cm ginger, peeled and finely chopped
2 onion, chopped
2-4 tbsp Thai green curry paste
1 tin of coconut milk
1tsp sugar
3-4tsp Thai fish sauce
2 kaffir lime leaves
1 green chilli, de-seeded and chopped
salt and pepper
1 red chilli, thinly sliced
1 tbs coriander, roughly chopped


In a saucepan fry the ginger and onions until golden brown.

Add the Thai curry paste and fry for a couple of minutes.

Stir in the coconut milk, sugar, fish sauce, lime leaves and chilli and simmer for 5 minutes to infuse. Season.

Add the leftover turkey and heat through.

Serve sprinkled with the sliced red chilli and coriander. Simples!
