With the weather getting warmer and Spring on its way, try out this quick, easy and light butternut squash salad recipe for Wellness Wednesday!

Ingredients:

1 large butternut squash peeled and cut into  chunks
200g feta cheese
100g good quality  black pitted olives
50-100g toasted  pine nuts
1 packet of rocket
olive oil
salt & pepper

Method:

Fry the butternut squash cubes in a very hot pan with a  little oil until a roasted effect is reached.  This will take 7-8 minutes.  Leave to cool.

Cut the feta into cubes.

Toast the pine nuts either in the oven or in a dry pan on a highish heat.

Mix together all the ingredients, except the  rocket, in a serving dish with a little-added olive oil and plenty of seasoning and, just before serving, toss in the rocket.
