If you’re detoxing for January, or merely looking to eat a little healthier in the new year, we recommend this delicious and healthy Chia Pudding. Chia seeds are ridiculously good for you, boasting a tonne of health benefits and essential vitamins, including; Omega-3, Calcium, Iron, Magnesium, Selenium, Zinc and Folic Acid.

Mixed with a little peanut butter and layered with stewed cinnamon apples and then topped with a nut crumble, this pudding is a real show stopper!

Spiced Apple & Peanut Chia Pudding

(serves 4)

Ingredients
For the Chia Pudding

235ml almond milk
60g chia seeds
60g ManiLife crunchy original peanut butter
3 tbs maple syrup
pinch of salt
For the Spiced Apples
2 apples, peeled, cored and diced
1 tbs blueberries, roughly chopped
2 tbs water
2 tbs maple syrup
1 tsp lemon juice
1 tsp ground cinnamon
pinch of salt
For the Nut Crumble
1 tbs hazelnuts, roughly chopped
1 tbs almonds, roughly chopped
2 tbs desiccated coconut
2 tbs porridge oats
2 tbs coconut butter
2 tbs soft brown sugar

 

Method

Preheat oven to 170C.

To make the chia pudding; in a bowl, stir all the ingredients together and leave to sit.

To make the nut crumble; mix all the ingredients and sprinkle on a lined baking sheet.
Bake in an oven for 15-20 mins, until golden.

For the spiced apples; put all ingredients into a small saucepan with a lid on and simmer until apples are tender.

To assemble; in a glass, spoon the apples and then the chia pudding in consecutive layers.
Finish with a layer of the crumble.
