You may or may not know, but Sophie lived in Tel Aviv for 3 years with her now husband, who is Israeli, and, like all other Israeli’s, he is mad for humous! Well, when Sophie lived there she didn’t just discover the best damn humous money could buy, she also discovered how those in the Middle East use tahine to its full and most delicious potential in a Tahine Dressing/Dip. Having been taught this delicious Tahine Dressing/Dip by her mother-in-law she now gets through about a tub a week and she is happy to share the recipe with you…addicts beware!
Tahine Dressing
(enough to last you a week/month – depending on how much you eat 😁)
Ingredients:
1 x 454g tub tahine – the good stuff! usually in a plastic tub (not in a glass jar and probably not from a normal supermarket)
juice of 3 lemons
4 clove of garlic, pureed
cold water
ground cumin/ground coriander (optional)
salt & pepper
Method:
Fill a Magimix bowl with about 300ml of water. Turn the Magimix on and pour the tahine through the spout until it has all been added. Keep the magimix running and add the lemon juice and garlic.
Add more water until you reach your desired consistency (for a salad dressing you would want a thinner consistency than when used as a condiment, or if you would like it as a dip make it thicker).
Finally season to taste and add more lemon/garlic if desired.
Leave to sit in the fridge for a few hours in order for it to rest.
N.B. It will thicken as it cools so bare this in mind when adding water.
N.B.B. If you don’t have a Magimix you can mix it by hand but blending it in this way incorporates air which enables you to make it thicker without adding too much tahine, which can make it bitter.
