It’s week 3 of #WorldVeganMonth and we are craving something sweet again so here’s a treat to share – extra-special yummy Vegan Cookies! Delicious with a cuppa and a surefire way to get you out of the cold!

Vegan Cookies

Ingredients:
125g plain flour
¼tsp bicarbonate of soda
½tsp salt
85g coconut butter
75g brown sugar
50g sugar
1 caps vanilla extract
chia egg (15g ground chia with 45ml water)
100g vegan chocolate chips

Method:

Preheat the oven to 170C.

Line a baking tray.

Mix together the flour, bicarb and salt; set aside.

In a medium bowl, cream together the coconut butter and sugars then beat in the vanilla and chia egg until light and creamy.

Mix in the flour ingredients until just combined then stir in the chocolate chips.

Mould into cookies and keep approx. a 5cm gap between each cookie to prevent sticking when cooked.

Bake for 13-15 minutes or until the edges are lightly toasted.

Cool on baking trays for a few minutes before transferring to wire racks to cool completely.
