Enjoy your weekend in the sun (while it lasts) with these delicious Falafels. You can replace the eggs with flax seed paste and make them Vegan, too! Why not whip up some Tzatziki and enjoy them with a lovely crispy salad and a glass of wine?
Ingredients:
2 tins chickpeas
1 onion, finely chopped
2 cloves garlic, finely chopped
2 tsp cumin, roughly ground
1 tsp coriander seeds, roughly ground
1 1/2 tsp turmeric
1/2 tsp chilli powder
1/2 tsp black pepper
1 1/2 tsp salt
1 tsp tahini
2 tsp lemon juice
2 tbsp chopped coriander
2 tbsp chopped parsley
1 egg OR 3tbsp flax seeds and 1 tbsp water processed
50g fresh breadcrumbs
4tbsp breadcrumbs OR 4tbsp sesame seeds (for coating)
Method:
Soften the onion in some oil, then add the garlic and cook briefly.
Process the ingredients with the onion and garlic (except the eggs or the breadcrumbs).
Stir in the eggs OR flax seed paste and breadcrumbs.
With wet hands shape the mixture into small rounds 4cm in diameter and 1-1.5cm thick. Roll in the breadcrumbs/sesame seeds and fry in the hot oil until golden.
