We wanted to bring you this summery dish of a simple yet delicious Vegan Stir Fry Recipe. Full of flavour and vegetable goodness!

Ingredients:

1tbs ginger, peeled and chopped
1 green chilli, thinly sliced
125g mushrooms, sliced
½ red pepper, deseeded and thinly sliced
2 Bok Choy, into quarters with top leaves seperated
2 spring onions, trimmed and sliced
2 cloves garlic, peeled and finely chopped
100g bean sprouts
150g medium noodles, cooked
3tbs hoisin sauce
1tbsp tamari
mirin to taste
soy to taste
2 tbsp coriander, roughly chopped
1tbs sesame seeds, toasted

Method:

Fry the ginger, chilli and mushrooms for a minute.

Chuck in the pepper, spring onion, bok choy stalks, garlic and bean sprouts until cooked.

Add the noodles, bok choy leaves, tamari sauce and mirin and soy to taste.  Stir until noodles are hot and serve.
