2 cloves of garlic, roasted
1 lemon, juiced
1/2 tsp cumin
pinch of cayenne pepper
pinch of salt
1 tbs extra virgin olive oil
Griddle the aubergine until soft.
Once soft, remove the inside and discard the skin.
In a bowl add the tahini, garlic, fresh lemon juice, cumin, salt, cayenne pepper, and olive oil and mix together.
Add the aubergine and use a fork to mash everything together until combined.
Garnish with smoked paprika or parsley.
