And here’s how we do it…
Ingredients
1 butternut squash, peeled and cubed
extra virgin olive oil
200g feta, broken
100g pitted black olives
100g pumpkin seeds
rocket
vinegar
seasoning
Method
Preheat your oven to 200C.
In a roasting tin, toss the butternut squash in the olive oil and roast for 25-30 mins until golden brown and soft.
Put into a bowl and season with olive oil, vinegar, salt and pepper.
Put the butternut onto a plate and sprinkle feta, olives, seeds and rocket – bon appétit! 👌
