(serves 2)

100g sea bass, cut into cubes
2 limes, juice
½ tsp salt
1 avocado, cubed
½-1 red chilli, deseeded and cut into small slices
½ red onion, finely chopped or very thinly sliced
1tsp coriander, leaves chopped
2tbs extra virgin olive oil
1 tsp sesame seeds, toasted

In a bowl, mix together the lime juice, avocados, red chill, onion, coriander and olive oil.

20 mins before serving add the fish to ‘cook’ in the lime juice.

Check seasoning.

Divide the ceviche between your 2 plates and drizzle with extra virgin olive oil and a sprinkling of sesame seeds and veg crisps.

N.B. You can add ginger and garlic to the fish and have a mix of lime and lemon juice if preferred.
