Ingredients:
125g self raising flour
¼ tsp salt
15g butter
50g mature cheddar cheese, grated plusextra for sprinkling on the top
1/4tsp chilli powder
1/2tsp mustard powder
1 egg
75ml milk
½ tsp baking powder
Method:
Pre heat oven to 200c.
In a bowl put all the dry ingredients except for the cheese and rub in the butter to breadcrumbs stage.Stir through the cheddar.
In a measuring jug add the egg to the milk . Make a well in the centre of the dry ingredients and pour in enough milk/egg to give a fairly soft but firm dough using a knife to mix then with your hands to gently knead until smooth. Do not pour in all the milk at once as you may not need it all to get to the right consistency.
Roll the dough on a dusted surface until 2.5 cms thick.
Using a pastry cutter cut into your shape, picking up the remaining dough and knead together and roll out again until all the dough is used.
Put scones on a lined baking sheet and brush with milk with a sprinkling of grated cheese.
Bake for 10-15 minutes until golden brown and cooked. Cool on a wire rack.
