Our Chickpea Salad is a delicious lunch option or a fantastic side dish to a BBQ or buffet.

50ml olive oil
1 red chilli, finely sliced
8 cloves of garlic, puréed
2 onions, finely sliced
150ml cider vinegar
2x 400g tins of chickpeas
1 bunch coriander, chopped
1 bunch parsley, chopped
4 spring onions, finely sliced
extra virgin olive oil
100g feta, crumbled


Heat the oil in a saucepan and add the chilli, garlic, and onions. Cook until the onions are soft.

Add the vinegar until it has evaporated.

Pour the mixture over the chickpeas when still warm.

Just before serving, add the coriander, parsley, spring onions and olive oil to the bowl.
Season and toss with the feta.
