Our Chickpea Salad is a delicious lunch option or a fantastic side dish to a BBQ or buffet.

50ml olive oil
1 red chilies finely sliced
8 cloves of garlic pureed
2 onions finely sliced
150ml cider vinegar

To serve:
2x 400g tins of chickpeas
1 bunch of fresh coriander chopped
1 bunch of parsley chopped
4 spring onions finely sliced
extra virgin olive oil
100g crumbled feta


Heat the oil in a saucepan and add the chilies, garlic, and onions. Cook over high heat for 5 minutes

Add the vinegar until it has evaporated.

Pour the mixture over the chickpeas when still warm.

Just before serving, add the coriander, parsley, spring onions and olive oil to the bowl. Season and toss with the feta.
