💁🏼 Happy February guys! 💁🏼

It’s the first of the month and it’s time to start thinking about those exciting Valentine’s Day plans! As you already know, we have a crazy amount of lovvvved-up classes lined up for you guys and we can’t wait to get cooking! We’ll be chatting a little more about our wonderful February classes in tomorrows Shenanigans but for now, let’s crack on with this gorgeous dessert recipe!

This month we’ve teamed up with Time and Leisure Magazine to bring you a luxuriously sweet treat…

Chilled Lemon Soufflé with a Pistachio Crum!


3 large eggs
225 caster sugar
3 lemons
250ml double cream
1 sachet gelatine
75ml water
blitzed pistachios


Pour the water into a small saucepan and sprinkle the gelatine evenly over the surface

Leave to ‘sponge’ for several minutes

Meanwhile, separate the eggs and place the yolks, sugar and grated lemon zest into a bowl

Beat with an electric whisk until light, white and mousse-like. This will take several minutes

Warm the lemon juice, gradually pour onto the beaten egg mixture and whisk for another two minutes

Half whip the cream and fold into the egg mixture

Dissolve the gelatine over a very gentle heat and fold this into the mixture

Whisk the egg white to soft peaks and fold into the mixture

Pour the soufflé into a glass bowl, or prepared individual soufflé dishes

Put in the fridge to chill

Before serving roll the sides in the pistachio crumb and decorate with pomegranate seeds and a caramel shard (optional)
