We hope you had a lovely relaxing weekend and are ready for our chick-licious recipe!
As many of you will be aware, Sunday was a special day for thousands of wonderful mums across the country. A big shout out to all of you hard-working and uber patient Mothers! Thanks for putting up with us for so long…OH, and an even bigger shout out to Mumma Horsford for putting HUGE smiles on everyone’s face for years now. You really are the life and soul of The Avenue and we love you for just being YOU!
Sons and daughters, if you didn’t quite manage to treat your mothers this weekend for any reason, we’ve got the perfect recipe lined up to really show them how much they mean to you. It’s the perfect family supper recipe – simple but delicious.
Ingredients:
1 small onion, finely chopped
2 garlic cloves, peeled and sliced
1cm fresh ginger, peeled and chopped
1 tbsp dry sherry
2 tsp clear honey
2 tbsp soy sauce
5 cardamon seeds
4 chicken breasts
Method:
Pre-heat oven to 180C.
Mix the marinade (everything minus the chicken).
Add the chicken breasts and leave for at least 30 minutes or overnight.
Arrange a large sheet of foil on the bottom of a baking dish and place the chicken breasts on the foil (not touching each other) and pour over the marinade. Seal the foil tightly over the top of the chicken and bake for approximately 15 minutes.
Remove the chicken and slice diagonally onto a serving plate covered with the marinade.
Great served with rice and fresh coriander.
