These crunchy balls of Mediterranean joy are easy but pack a flavoursome punch! Whether you’re adding them into a salad or stuffing them in a delicious wrap, they make for the perfect lunch creation. Falafel Recipe

Ingredients:
900g chickpeas, soaked overnight with 1 tsp bicarb
2 onion, finely chopped
2 cloves garlic, finely chopped
2 tsp cumin, ground
1 tsp coriander, ground
1tsp turmeric
½tsp chilli powder
½tsp black pepper
2 tsp salt
½ lemon juice
coriander
parsley
gram flour until it bonds

Method

Process ingredients with the onion and garlic.

With wet hands shape the mixture into small rounds 4 cm in diameter.

Place in oil at 160-180C for 5 or so minutes until golden and cooked through.
