Is there anything better than the smell of freshly baked bread in the morning? This week’s recipe is a delectable and easy to make Gluten Free Soda Bread. Why not try this (slightly) less naughty version this weekend?

Ingredients:

25g gluten free oats
1 1/2 tsp olive oil, plus extra for greasing
150ml milk
1tsp apple cider vinegar
90g teff flour
75g rice flour
75g buckwheat flour
1/2 tsp salt
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
40g sunflower seeds
15g blackstrap molasses
2 eggs

Method:

Preheat the oven to 170C.

Grease the tin and line the bottom, then cover with the oats – if the flakes don’t stick, pour these out and reserve for the top of the loaf.

Combine all the dry ingredients, separately combine the wet.

Mix until everything is well combined.

Pour into the tin, top with the remaining Oats, lightly pressing them into the dough. Bake for 20 minutes then turn down the oven to 150C and bake for a further 10 minutes.

Remove the loaf from the tin and put back in the oven upside down for a further 10 minutes.

Serve warm with some extra-virgin olive oil and balsamic vinegar, or a spreading of delicious blackcurrant jam.
