We hope you are all getting into the festive mood and cooking up some Christmassy delights! Are you struggling to find a mince pie recipe that makes it worthwhile not cheating with shop bought? Well, these little festive pockets of fruity love couldn’t be more simple and will really get you in the mood, Avenue-style of course..
Mince Pies
(makes 14)
Ingredients
Mincemeat:
110g cooking apples peeled, cored and finely chopped
55g shredded suet
85g raisins
55g sultanas
45g currants
45g whole mixed peel
90g soft brown sugar
grated zest and juice of ½ an orange
grated zest and juice of ½ a lemon
15g almonds chopped roughly
1 tsp mixed spice
½ tsp cinnamon
a grating of nutmeg
35ml brandy
Extras:
pack of shortcrust pastry
Method
Put everything into the saucepan, except the brandy, and bring to the boil stirring well.
Take off the heat and add the brandy and leave to cool.
Pre-heat the oven to 180C.
Roll out the pastry to a thickness of under a £1 coin and use a 4″ pastry cutter to cut the larger circle for the bottom and another smaller circle or star for the top of the mince pies.
Push the bigger circle into a cupcake tray and fill with mincemeat.
Top with a smaller circle or shape of your choice.
Cook for 20-25 minutes or until golden brown.
Cool on a rack.

Ps… You can either make your shortcrust pastry or buy it. We’ve found generally if you make the pastry yourself it’s so short it breaks up when stored in tins! Crazy advice from a cookery school I know but why stress?!…😝
