shortcrust pastry or (filo also works well)
110g smoked streaky bacon, chopped
1 onion, sliced
250ml double cream
75g strong cheddar, grated
Pre-heat the oven to 190C.
Roll out the pastry and line a cupcake tray with your pastry. Prick the base and bake blind.
Meanwhile fry the bacon and onions until soft.
When cooked remove pastry cases from the oven and turn down to 175C.
Spoon the mixture over the cooked pastry cases and stir the rest of the ingredients together, saving a tablespoon of the grated cheese to sprinkle on top, and pour into the pastry cases.
Sprinkle with the remaining cheese and bake for 20 – 25 minutes until set. (Take care not to overcook the quiches − it should be soft and creamy.)
N.B. A mixture of milk and cream is excellent for a less rich quiche.
