It’s a shame the sun has gone on ‘oliday (once again) but we aren’t letting London’s grey weather defeat us! We’ve finally eaten all of last weeks’ leftovers and we are ready to warm our tummies with something a little lighter. This gorgeous Moroccan Tomato Soup recipe is perfect for the fam, a quick lunch snack or for that all important #DateNight. Here we go then! Our Moroccan Tomato Soup Recipe! Enjoy…

Ingredients:

2tbs olive oil
2 onions finely sliced
2 cloves of garlic, chopped
1cm ginger, peeled and finely chopped
1/2tsp coriander seeds
1/2tsp cumin seeds
1/2tsp fennel seeds
1/4tsp chilli powder
10 saffron threads
750ml chicken stock
1 tin chopped tomatoes
1/4tsp smoked paprika
100g red lentils
Freshly ground black pepper
Small bunch of flat leaf parsley, chopped
Small bunch of coriander, chopped
Zest of 2 lemons, finely chopped
Juice of 1 lemon
Salt

Method:

Heat the oil in a pan and cook the onions and ginger together over a medium heat until the onions begin to colour.

Crush the garlic, coriander, cumin, fennel, chilli and onions and ginger.

Now add the stock, tomatoes, paprika and lentils and simmer for 15 minutes until the lentils are cooked.

Immediately before serving, stir in the parsley, coriander, lemon zest and juice.

Season carefully.

Today marks the start of our Clean Eats Classes and we’ll be introducing you guys to more delightfully light ‘n healthy recipes just like this one with the help of guest chef and nutritionist, Eloise! We kick-started the class this morning with students knocking up Balsamic-Roasted Asparagus and mighty fine Sweet Pepper & Orka with a Tricolour Quinoa salad! It was bloomin’ delicious and guilt free of course.
