What better way to start the week than with a delicious Banana Cake smothered in luxuriously gooey Salted Caramel? It really couldn’t get any better…😍

Ingredients:

For the loaf:
2 very ripe bananas, roughly broken up
175g sugar
225g self-raising flour
110g soft butter
1 level tsp baking powder
2 tbsp milk
2 large eggs

For the sauce:
100g sugar
100g butter
150ml double cream
salt to taste

Method: 

Preheat the oven to 170c.

Line a loaf tin.

In a Magimix, cream the butter and sugar. Add the eggs and process again.

Add the banana and milk and process once more.

Finally, add the flour and baking powder and pulse until just mixed. It is important not to over process at this stage.

Pour the mixture into the loaf tin and place into the centre of the pre-heated oven for about 45 mins to an hour.

Remove the loaf from the oven and allow to cool. If in doubt, check if is cooked with a knife!

For the sauce, put all ingredients into a pan and heat until golden.

N.B. If, like Sophie, you like it really gooey and bananary then break another 2 bananas up and bury them in the mixture when pouring into the loaf tin!

Cut yourself a HUGE slice of warm and tasty banana bread and smother it in Salted Caramel Sauce. If you’re feeling extra sweet, sprinkle over your favourite choccy treat or accompany with some rich chocolate ice cream, it is national chocolate caramel day after all! Any excuse…

The crew are back at it again with #AvenueTours and on Friday, the whole family packed up their things and headed off to Warsaw! Today, they’re on the move again (we don’t call it Avenue tours for no reason). They’re setting foot on the lovely slopes in Meribel. Jealous! With all those invaluable skills acquired from our renowned Chalet Host Course, we’re sure they’ll settle in just fine…😋

With the Horsford clang living it up on their well-deserved break, back at base, we’ve got a busy week ahead of us, as always!
