It’s #NationalPastaDay and over here at The Avenue, we’d like to share our mouth-watering Pear and Ricotta Ravioli recipe to satisfy those mid-week carb carvings that we are all too familiar with! This luxurious nutty recipe is perfect for the family and ideal to settle that post-work stress.
So kick back, pour yourself a large glass of Pinot Noir and if you’d like to celebrate National Pasta Day in style, here’s our recipe…
Ingredients:
- 200g of Flour
- 2 Eggs
Filling:
- 125g ricotta
- 3 pears, peeled, cored and quartered
- 20g butter
- 30 fl oz red wine
- 10 fl oz balsamic vinegar
- sprig of thyme
- zest and juice of 1 lemon
- salt and pepper
- 100g parmesan, grated
Sauce:
- 60g butter
- walnuts, crushed
- rocket and parmesan to serve
Method
Pop the flour on a work surface, make a well in the middle and add the egg
Mix the ingredients and knead till fully combined
Wrap in clingfilm and rest
In a saucepan, fry the pears in the butter and add the wine, thyme, lemon zest and juice. Carry on cooking until the pairs are soft but still holding their shape
When the pears are cooked, cut into small squares and fold into the ricotta and parmesan. Season!
Roll out your pasta on the widest setting for 6 times to the last setting
Put a blob of filling down one end of the pasta sheet leaving a gap in-between then fold over and seal making sure there is no air in the pocket
Melt the butter in a pan till light brown, add the walnuts and cook until slightly darker
Boil pasta for a few minutes or until al-dente
Coat the pasta in the butter sauce and serve with rocket and parmesan. Enjoy!
