Finally, it seems that the universe is making up for the longest winter ever and giving us all a much deserved break with this b-e-a-utiful weather! ☀️

And what better way to enjoy the sunshine, than by pairing it with some delicious homecooked food?!

To celebrate #WorldTapasDay on Wednesday 16th June, we’re treating our Avenue Amigos to this great, summery Spanish Tapas dish, of Prawns Pil Pil. If you close your eyes and take a big bite, it’s almost like being in a restaurant in Spain! 😌

So without further ado, lets get to it:

Prawns Pil Pil
(Serves 4-6 as a tapas)

Ingredients:
12 king prawns, raw, shelled and deveined (or shrimps)
3 garlic cloves, thinly sliced
2 birds eye chilli’s
smoked paprika
lemon juice
olive oil

Method:

Put 50ml of oil in a frying pan and confit the garlic and chilli very slowly, so the oil is infused with the garlic but the garlic doesn’t burn.  Once the garlic is starting to colour, scoop the garlic out and put it in a small bowl.

Heat the oil again until very hot and add the prawns. Cook them in the hot oil for a couple of minutes, until just pink then add the garlic and chilli back to the oil and turn off the heat.

Add a squeeze of lemon juice and sprinkle with paprika.

Serve immediately with lots of bread to mop the sauce!
