And here’s how we do it…
1 butternut squash, peeled and cubed
200g feta, broken
100g pine nuts
Pre heat your oven to 200C.
In a roasting tin, toss the butternut squash in the olive oil and roast for 25-30 mins until golden brown and soft.
Put into a bowl and season with olive oil, vinegar, salt and pepper.
Finally, fold in the feta, olives and rocket and bon appétit! 👌
