1kg potatoes, sliced
1 red onion, peeled and sliced1 tsp grated nutmeg
3 cloves garlic, chopped
225ml cream
3 bay leaves
1 bunch fresh thyme, leaves removed
Parmesan cheese, grated
olive oil


If you have one use your thick slicer on your Magimix to slice your onion and potatoes.

Preheat oven to 220C.

Put your potatoes, onion, garlic, cream, nutmeg, half the thyme leaves, bay leaves, half the Parmesan, a glug of olive oil and seasoning into a roasting tray and mix together.

Put the tray over a medium heat and pour 200ml of boiling water over the top, cover with tin foil and leave to steam.  Occasionally give it a shake so it doesn’t stick.

Lightly cover the remaining thyme with a little olive oil.

After 10 minutes remove the tin foil and sprinkle over the remaining Parmesan and thyme.  Put back in the oven until golden brown.
