Why not try this delicious and easy to make Salmon En Papilotte for a weeknight supper? Its delicious with an Oriental Lentil Salad or Coconut rice. You can even make a few, wrap them in baking paper and keep them in the freezer. When you want to eat them, just take it out, leave it to thaw and pop it in the oven.

(Serves 1)

Ingredients:

150g salmon fillet
½ clove garlic, very finely chopped
1tsp of fresh ginger, shredded
2tbs of mirin
2tbs soy sauce

Method:

Preheat your oven to 200C.

Place the salmon onto a large square of baking parchment and top with the chopped garlic and shredded ginger.

Drizzle the soy sauce and mirin on the salmon.

Wrap the salmon in the paper, cook for 7-8 minutes and enjoy!
