Happy National Bread Week!
Ok, it might only be National Bread Week in Ireland…but we love any excuse for a party! To celebrate, we thought we’d share our take on a traditional Irish Soda Bread. This little steaming bundle of joy is scrumptious and great to make at home because you don’t knead OR prove it – scandalous!
And what goes perfectly with fresh bread? Our Spiced Butternut Squash Soup! We are feeling super generous today…so we’ve decided to share another one of our favourite recipes from The Avenue Cookbook. Our Spiced Butternut Squash Soup is full of delicious oriental flavours like ginger, chilli and lemongrass and is the perfect supper for a cold, windy evening in September.
450g malted brown granary flour
1tsp bicarbonate of soda
142ml buttermilk or natural yoghurt
Pre-heat the oven to 180C.
Mix together the dry ingredients.
Whisk the buttermilk/yoghurt with the water and stir this mixture into the flour, to make it into a dough.
Shape and put onto a lined baking sheet. Cut a cross into the dough to form four or eight sections.
Bake for about 30 minutes in a pre-heated oven until hollow when tapped on the base.
Cool for at least 20 minutes – as tempting as it is!!!
Serve with a steaming bowl of our Spiced Butternut Squash Soup.
Warning: You will consume this entire loaf in minutes. So make 2!!!
