Hey guys! 😍

We are feeling super pumped this week and can’t wait to share this delicious Italian Tiramisu Recipe to get those #SummerVibes flowing. If you aren’t jetting abroad this year, then never fear! We’ve got a stonking list of punchy International Classes to get you livin’ the summer dream from the comfort of our cosy kitchen. Just minus the flight and price tag 😅.

Yesterday we headed to Peru and whipped up some authentic Peruvian Chicken on a bouncy bed of Quinoa Stir Fry. Mouth-wateringly simple yet packing a punch of flavour – and that’s not even half of it!

We’ll be saying our goodbyes to Emily (the most amazing Avenue member) this Friday so we are busy baking her favourite goodies…her list is endless.

Anyway, on with this week’s Tasty Tiramisu Recipe!

4 egg yolks
90g icing sugar
30ml amaretto and extra for coffee
450g mascarpone
1 cup of strong black coffee
20 sponge fingers
3 heaped tbsp Bourneville chocolate, chopped

Whisk together the yolks, icing sugar and Amaretto until thick and creamy.

In a separate bowl, mix the Mascarpone until loosened and fold into the yolk mixture.

Don’t overbeat as this will cause it to split.

Put a spoonful of the mixture into the base of your cocktail glass and sprinkle with some chopped chocolate.

Add Amaretto to the black coffee to suit your desired taste, and dip the sponge fingers into the liquid until soft.

Place some of the sponge fingers in a layer on top of the mixture and repeat.

The top layer is Mascarpone sprinkled with the chopped chocolate.

This tasty Tiramisu recipe serves 4, though it’s that irresistible, we’d gobble the whole lot…
